Now that the Comicon is over, it’s time (especially for Tashi) to go back to his (ketogenic) diet. I was too tired from all the walking and I didn’t have the time to fix us food as I originally planned so he wasn’t able to stick to his diet for two days. To make up for those days, I made him cheesy broccoli soup with herbed parmesan crisps for tonight’s dinner. Very easy to make and delicious too!
Ingredients:
- 2 tablespoons butter or coconut oil
- 2 cups chicken broth
- 1 cup heavy cream
- 2 cups shredded cheddar cheese
- 4 cups fresh broccoli, chopped
- 1 small onion, minced
- 1 teaspoon minced garlic
- salt and pepper to taste
- Optional – bacon bits
Instructions:
Heat broth and broccoli until broccoli is tender. Mash with a potato masher to break up the broccoli, or transfer to a blender and puree.
In another pan, melt butter/heat coconut oil. Add and brown minced garlic and onion. Add mashed broccoli. Stir well and let simmer for about 2-3 minutes then add heavy cream and shredded cheese.
Garnish with more cheese. Add sea salt and pepper to taste.
Creamy, delicious, and very filling. Enjoy!
