La Cocina De Madir

Monday.  Good thing I’m on vacation so even though I woke up really early at least I don’t have to go to work.

I’ve been travelling since I got here (in the Philippines)  so staying home today was a bit relaxing even though I spent the day playing with my nephew, Little Tashi and helping my niece, Nina review for her school tests tomorrow. Madir fixed us some delicious lunch. Fish!

Paksiw. Fish cooked and simmered in vinegar. One of my favorites!

 

In our dialect (Bikolano), we call this dish cocido but most Filipinos call this sinigang – a Filipino soup or stew characterized by its sour and savoury taste most often associated with tamarind (Wikipedia). My Mom used keylime juice instead of tamarind.
