Apple Pie

A friend of ours gave us a bunch of apples last week and T  ‘challenged’ me in baking an apple pie. I have never baked an apple pie before. I am not a huge fan of pies. Nevertheless, I accepted the challenge.  This is not the first time T has challenged me.  The first time was probably two or three years ago. He told me I couldn’t make a good Pho. What a clever way to make your wife fix you a delicious bowl of Pho!  And yes, he enjoyed it.  The same way he enjoyed the apple pie!

The recipe below was taken from the internet. If you know me, you’ll know that this now includes my own tweaks as I don’t usually follow recipes. I like to add my ‘personal touch’ to anything I cook/bake.

T and a few co-workers have agreed that the pie was delicious. It is! Take it from someone who’s not a huge fan of pies!



6 cups apples, peeled and thinly sliced 
3/4 cups brown sugar
2 tbsp all-purpose flour
1 tsp ground cinnamon
1/4 tsp salt
1/4 tsp ground nutmeg 
2 tbsp freshly squeezed lemon juice


1. Heat oven to 425°F. Place 1 pie crust in an ungreased 9-inch aluminum pie pan. Press firmly against side and bottom.


2. In a large bowl, gently mix filling ingredients; spoon into crust-lined pie plate. Top with second crust. Wrap excess top crust under bottom crust edge, pressing edges together to seal; flute. Cut slits in top crust. (For more tender apples, it’s best to simmer the apples first in 2 tbsp water before mixing them with the rest of the ingredients).


3. Bake 40 to 45 minutes or until apples are tender and crust is golden brown. Cover edge of crust with 2- to 3-inch wide strips of foil after first 20 minutes of baking to prevent excessive browning. Cool on cooling rack at least 1 hour before serving.  ENJOY!
