Lugaw, My Comfort Food

 

I just spent the last two hours in my kitchen and ended up with four dishes; Sweet and Sour Tuna, Mexican Chicken Lime Soup, Sauteed Bean Sprouts and my favorite comfort food, Lugaw.

Whether you call it porridge, congee, arroz caldo or rice soup, we Filipinos simply call it lugaw, soft-boiled glutinous rice simmered in meat broth, mostly chicken broth. Lugaw is also one of the Philippine street foods. Traditionally, lugaw is served for breakfast as well as for those who are sick.

There are several ways to prepare lugaw. I prepared mine today with the least amount of work needed.

shredded chicken and grated ginger

Ingredients:

  • 1/3 cup glutinous rice
  • 1 cup shredded ginger
  • 2 cups shredded chicken breast
  • 6 cups chicken broth
  • 1 small onion – minced
  • boiled eggs, fish sauce, pepper, lime, roasted garlic, scallions – optional

Directions:

  • Boil chicken broth. Add rice, ginger, chicken and onion. Let simmer until rice is fluffy.
  • Serve with sliced boiled eggs, roasted garlic, scallions, lime and fish sauce.
